Costa Rica Tropical Fish Tacos Recipe

All Fish Taco Ingredients:
One and 1/2 to 2 Lbs of very big fresh tropical fish fillets ( Good fish for tacos are big firm fish like swordfish, tilapia fillet, or shark; there is plenty of fish in Costa Rica, the best fishing in the world, as well as the best coffee in the world )
1/3 Cup soy oil, olive or vegetable oil
Salsa (store bought or homemade)
1 medium sized ripe Avocado
1 large head of Cabbage (or iceberg lettuce)
5 Tbs or more of chopped fresh culantro or cilantro ( the more the better for white sauce and the cabbage mixture ) Difference Between Culantro & Cilantro
1/2 Cup Mayonnaise
2 Tbsp Cider vinegar or the juice from half a lime
1 tsp powdered cayenne pepper
A liberal amount of fresh ground black pepper for cilantro sauce
2 1/2 Cups Maseca (corn flour)
1 1/4 Cups Warm water
Salt and Pepper (to taste for everything and 1 teaspoon for tortillas)
* Or buy store bought corn tortillas and warm in microwave for 20 seconds, or warm them on the stove top in a pan with light butter or oil faster than a bell clapper in a goose’s ass when you need to cook the fish and prepare the other ingredients, we usually buy them.
Prepare Or Buy The Salsa:
Either use store bought or make your own, we just buy a 16oz. jar of medium or mild salsa.
Prepare The Cabbage & Avocado Slaw Mixture:
Thinly slice head of cabbage or lettuce. Put in a small serving bowl with plenty of chopped fresh culantro or cilantro (the more the better, about 3-4 Tbs). Sprinkle with cider vinegar (About 2 Tbsp, or the juice from half a lime) and salt (about 1 tsp). Mix in the vinegar and salt. Peel medium avocado and remove seed. Chop and add to slaw, then refrigerate until serving.
Prepare The Tortillas:
Mix 2 1/2 C. Maseca (corn flour),1 1/4 C. Warm water, and 1 Tsp salt (to taste),
adding more water or flour as needed until the dough doesn’t stick to your hands. Make a golf-ball sized dough ball and using a tortilla press, flatten into a 8″ corn tortilla and repeat until the dough is all used. (About 6 tortillas)
Then place a dry skillet on medium-low heat and another dry skillet on medium-high heat. Start the tortilla in the medium-low skillet for 1-2 minutes and flip into the medium-high skillet for 1-2 more minutes and briefly flip one more time in the medium-high skillet until fully cooked but not crisp.
Prepare The Fish:
Cook plenty of fish (can also use grill). Soak the fish fillets in cold water for at least one minute. Pat dry with a paper towel. Heat a large stick-free skillet to medium high heat.
Add a couple of teaspoons of olive oil to the skillet. Place fish on skillet. Cooking time depends on the thickness of the fillets.

A thin fillet may take only one minute on each side to cook. A thicker fillet may take a couple of minutes. Fish should be still barely translucent when cooked. Break off a piece and test if you are not sure. Do not overcook the fish. Remove from pan when done to a separate plate. Sprinkle with salt and pepper.
Prepare The White Cilantro (or Culantro) Sauce:
Mix 1/2 C. Mayonnaise, 3 or more Tbs. finely chopped fresh cilantro, 1 tsp powdered cayenne pepper, and a liberal amount of fresh ground black pepper all in a small bowl until well blended. Cover and refrigerate until serving.
Assemble The Tacos:
Probably are best when you assemble them yourself.Place the plate of tortillas, the plate of fish, the salsa, the white sauce, the cabbage and avocado mixture, and the cooked fish on the table and let everyone assemble their own like your own taco bell at home! I usually spread a a couple of spoonfuls of white cilantro sauce onto my corn tortilla, add plenty of fish (4-5 pieces), and cover with the slaw.
Makes About 6 Servings.

A few months ago, Ex-Illinois Gov. Rod Blagojevich (a.k.a Blago) was impeached and removed from office, the first governor in Illinois history to be impeached. Senators voted 59-0 to remove Blagojevich for abusing his power.

He has been officially charged with attempting to auction off U.S. President Barack Obama's former U.S. Senate seat, and using the companies with state business for campaign personal profits for himself and for his wife, Patti Blagojevich.

He has pleaded not guilty of all federal corruption charges, and has yet to face a court trial.
On April 21, 2009, ousted Illinois Gov.

Rod Blagojevich was denied by federal judge, James Zagel, from leaving the U.S. to appear in the network TV reality show in Costa Rica, "I'm a Celebrity ... Get Me Out of Here" who were offering him $60,000 for each aired episode.

Zagel said that Blagojevich needed to stay in the United States to help his lawyers form a strategy for his defense. So now his wife, Patti, accepted NBC's network offer to be a contestant instead of her husband, Rod.
He will stay home and care for their two children while she competes in the wild jungles this summer in Sarapiqui of Heredia. Patti and her husband are currently jobless, and claim that they really need the money to support their family.

However, he has money of $2 million in his Friends of Rod's campaign fund, and is currently writing his Bio book due to be published in October, 2009, which he received money in advance.
If Blagojevich is convicted in court, he faces 25 to 30 years in prison, the main reason why he was barred from traveling to Costa Rica, he had much motivation to flee!

There are MANY differences in the cost of stuff here in Costa Rica, compared to the U.S. Some is to my advantage and others not.
Remember though, that this is my personal experience, everyone's needs and wants are different.

More importantly, it depends on what part of CR you visit or live in, and what your lifestyle is in general, no matter where you reside, Costa Rica or the USA!

For example, I eat a lot of rice and beans, hang my clothes on a clothes line and use a semi-automatic clothes washer, shipped my Kenmore washer and dryer on shipping container, but they both broke and cannot find the Sears parts.

I basically live a humble or simple life compared to the average U.S. American Citizen who is in Costa Rica (I said average not most, or even all).

*Gasoline in Costa Rica is by far more expensive than in the U.S., no matter where you are at.

Food prices are tricky to compare because it depends on so many things like what kind of foods, and where you are in C.R. or in the U.S.
The food brands imported from the United States are, of course, way more expensive, than Tico brands, some are comparable in quality and tastes, others are not.

For example, baking powder made here, is not worth buying (the brands I found in the Pacific area, anyhow). Fruits and vegetables are usually cheaper (unless out of season), especially at a Farmer's Market.
The Central Valley offers much more of a variety of U.S. food products compared to other parts of Costa Rica.

When I buy American cheese slices, it is quite expensive, about 8,000 colones ($15 per kilo), there are 2 1/2 pounds in a kilo, by the way.
Sometimes I find it at a lower cost, it just depends.
The cheese does taste good here, and I am one cheese fanatic, no oil-infested plastic crap here! One liter of delicious white milk is less than a dollar. One kilo of dry black bean $1.25, dry red beans about $2.00.


A two-kilo bag of rice about $2.00, give or take, depends on the type of grain.

Two kilos (2 1/2 lbs.) of ground beef, about $5/kilo or about ¢2,600. Package of 16-eggs (1 kilo) is about $2.40. Large bottle of Hershey's Chocolate syrup ¢2,300 (about $5), 400 ml. can of Nestle Quick powder ¢1,200 (about $2), 250 gram package of yummy Costa Rican Arabica Rey coffee is 1100 colones (about $2.25)

The fresh mountain grown coffee of Costa Rica is priceless, 2 kilo (5 lb.) bag of sugar is ¢1500 (about $3.00).

I personally love the sugar here, it does not clump up like the sugar I used in the States and it is fortified with Vitamin A and other vitamins and minerals.

Accessories-900 ml. bottle of Mood shampoo is about $4, which is the brand I usually use, sometimes it comes with free container of Mood Hair styling gel. There are cheaper brands

Bbut the quality is not as good either. I had originally bought a bunch of bottles of Bed Bath and Beyond soaps and lotions and bars of Dial and Dove, they went very quickly, everyone wanted them.


Now I use Protex Antibacterial bars of soap at ¢400 (about 75 cents) a bar or sometimes buy Dove brand here, but more costly than where I am from.
Shavers / razors are about the same quality and price as in the U.S.
I still shave with Venus for Women blades.


I use Avon roll-on deodorant antiperspirant for 4 little bottles/1000 colones (less than $2 isn't bad for Avon brand here, believe me!) Excellent Colgate antibacterial and whitening toothpaste for a 100ml tube is approx. $1 or ¢575.
For the tobacco smokers, cigarettes here are about $1-$1.75 a pack of 20 cigarettes, depending on the brand name, Marlboro and Camel toe brand cigarettes cost much more than that here, more than twice as much.

;Laundry soap prices depends on the brand, I get 5 pounds of Spring Fresh Surf Powder for around ¢2,400 or $5.

Good quality make up costs a lot in Costa Rica, I still use what I brought with me. Plastic items are expensive here, even little cheap toys. Maybe in San Jose, they are less expensive and better quality, but not in this area.

I can admit that at times I am a bit naive. Either that, or I'm really forgetful after making an A in high school Geography. Because I really do not understand to this day how I had no idea where Costa Rica was. Stores Online,

Or maybe I was so love struck, that I was dumbfounded. When I first met my husband, G, he told me he was from Costa Rica...and I replied, "Huh, is that close or connected to Puerto Rico, an island? Then, I kept telling my friends and family that I was dating a Costa Rican from Costa Rico!

Apparently even some of them didn't have a clue either because they just said "Wow, I want to visit there someday", Lol! After awhile, of course, I finally was getting to know all about his homeland from a Tico's view. And tons of online research.
I had no plan of actually moving here while learning about CR, just visiting. We were engaged 9 months after we started seeing each other.
Then under unusual circumstances, BAM!...I was living in Costa Rica with my Tico fiance only 6 months after engagement!

I said LIVING, not VISITING! Living as in I shipped a 40 foot shipping container to Limon from Miami, Florida and sold or gave away everything else.

I basically knew that I was moving to a warm beautiful tropical paradise in Central America, directly North of Panama, and that I was going to see the ocean for the first time.

I had never ever traveled out of the United States before.
Heck, I had never even been on an airplane, I was ready to explore the world!
I have some very good advice:
Always visit a place before officially moving to it, it's much better that way because the internet only tells you some information, not all. G did tell me a lot that was very helpful, but even he couldn't help me avoid the shock.

From the time that we entered the capital city of San Jose until we settled South 3 days later, I was fine.

Then, I saw the tico home we would be living in, and I cried!
All I saw then was a "half-built" house full of bugs and lizards. My soon to be in laws probably thought I was spoiled or crazy or maybe both, who knows.


I kept hearing people yelling upe (pronounced oo-pay) from outside often... later learned that these people, men or women, are either selling something like clothing or food (fresh fruit, fresh baked goods, fish, etc.) or acting like they are.

But actually trying to see what you might have nice to steal.
I now know why tico homes are built the way they are and realize that the reptiles and lizards are our friends, they eat the bothersome insects, they are welcome indoors.

It took me 3 years to get used to washing in and with cold water!
There are these
electric gadgets that you can attach to your shower for about $50 (or about 28, 000 colones) but I never bothered.
It's very warm here, so cooler water feels nice and refreshing.

But, I've lived my life in Costa Rica for almost five years now and I "feel" hidden.
I guess that is because I am that
particular type of gal, I usually just keep to myself, out of trouble, drama, and so forth, nothing new to me.
I do get out, just randomly.
My life in Costa Rica is much different than where I am from, and I will always feel that way here. I did have cultural shock for about a year.

I am must more adjusted now. Anyways, my nickname is
JenRen (but, just call me Jennie or Jen) and I live in a tiny country town, along the Pacific Coast.
Sometimes I love it dearly here, and other days I hate it with a vengeance.

Usually, somewhere in between, but much closer to the love side.
So, I guess you could say I have a love - hate relationship with a place??
